Nussecken for Christmas Time

Nut corners - a classic in all sizes - and not just at Christmas time.
Ingredients:
Dough:
- 100 grams of butter
- 60 grams of powdered sugar
- 1 pinch of salt
- 1 egg
- 180 grams of flour
- 30 grams (ground) hazelnuts
Topping:
- 50 grams of butter
- 120 grams of sugar
- 60 grams of sugar syrup , or honey
- 100 grams of cream
- 300 grams of hazelnuts (chopped)
- 100 grams (ground) hazelnuts
- 150 grams dark chocolate couverture
Procedure:
First with the dough hook of the hand mixer, then with your hands, mix and knead butter, powdered sugar, salt, egg, flour and ground hazelnuts until smooth. Put it in the refrigerator, covered, for one hour. Press the dough on a baking paper-lined baking sheet (with your hands). Preheat the oven to 180 degrees (Celsius). Let butter, sugar, syrup and whipped cream simmer over low heat, stirring occasionally, for about 4 minutes. This caramelizes the sugar. Do not let it get too dark, or the caramel will taste bitter. Remove the pan from the heat and stir in both kinds of nuts. Spread the nut mixture on the dough. Bake in the oven, on the bottom rack, for about 20 minutes. Allow to cool slightly and , with a sharp knife, cut into small triangles. Coarsely chop the chocolate and melt it in a small bowl in hot water bath. Dip one side each of the nut corners into the melted chocolate and let them dry on a cake rack.
