Kartoffelklöße is a popular and perfect side dish for many German meals (e.g., Sauerbraten, Lende, Frikadellen)

  • 2.2 lbs (1 kg) potatoes
  • 1/8 tsp nutmeg
  • 2 eggs, slightly beaten
  • 1/8 tsp cinnamon
  • ¾ Cup flour
  • 1 tsp salt
  • ½ Cup farina (Cream of Wheat)

Boil potatoes. Put through a ricer (makes about 4-1/2 cups). Add rest of ingredients. Beat well.

Roll into balls the size of a small orange. Drop into boiling, salted water. *

Allow to simmer 20 minutes. Lift out with slotted spoon.

Keep in a covered dish until ready to serve. Serve hot.

* It is a good idea to cook a small “test dumpling” first. If this falls apart, beat in a little more flour to the remaining mixture.
