These are a German specialty. Semmelknödel make an excellent side-dish and go well with all types of meat recipes (e.g., Schweinsbraten, along with Sauerkraut)

Ingredients:

  • 7 rolls
  • 150 ml milk
  • 2 eggs
  • 1 onion
  • ½ bunch parsley, flat
  • ½ teaspoon marjoram, dried
  • 1 tablespoon butter
  • Nutmeg
  • Pepper

Procedure:

Mince the rolls and soak them in milk for about 15 minutes. In the meantime, chop the onion and parsley and stew them in the butter with the majoram, let cool slightly. Knead eggs and nutmeg in the rolls dough, then mix in the onion mass. Let the dough steep for about 10 minutes, knead and season with pepper. Roll 7-8 Knödels and put them in boiling water for 20 minutes. Turn-over the Knödels from time to time, the water should not boil!

Instead of rolls you could also use white-bread.
