These nut meringues are also called erstesternen ("first stars"), a reference to the heavenly signs indicating the end of a fast day. They are traditionally served by German Jews at the meal following Yom Kippur.

Ingredients:

  • powdered sugar
  • ground almonds
  • ground cinnamon
  • grated lemon peel of half lemon
  • 2 eggwhites
  • 1 tablespoon of lemon juice

Procedure:

  • Mix finely ground almonds (150g), 300g of powdered sugar and other ingredients and knead lightly.
  • Roll out the mix (not too thinly).
  • Mix eggwhite, finely ground almonds (50g) and 250g of powdered sugar into a glaze.
  • Cut out stars and cover with glaze.
  • Bake the stars to a light golden color in a preheated oven on a greased baking pan (center rack) at 150°C.
  • Knead the remaining dough together with one or two tablespoons of ground almonds, roll out and cut out more stars.
  • Continue until all the dough is used.
  • The cooled cinnamon stars can be decorated with chocolate sprinkles, colored sugar or almonds.
