Ingredients:

  • ¾ C each Almonds and Hazelnuts (100g each)
  • ½ C + 2 Tbsp each Candied Lemon and Orange Peel (100g each)
  • ½ C + 1 Thsp Butter (125g)
  • ½ C + 2 Tbsp Sugar (150g)
  • 8 Tbsp Cocoa (unsweetened) [see below]
  • 2 Tbsp Vegetable Oil [see below]
  • 2 Eggs
  • 1C + 2 tsp. Flour (200g)
  • 1 C + 2-1/2 Tbsp Oatmeal (100g)
  • 2 tsp. Baking Powder
  • 2 Tbsp Cocoa (unsweetened)
  • 1 tsp. Ground Cinnamon
  • 1 knifetip each ground Cloves, ground Cardamom, and Allspice
  • 20 Backoblaten, app. 2 – 2-1/2” diameter (or Wafers, recipe given below)

Procedure:

Heat the oven to 350 degrees.

Chop the almonds and hazelnuts fine. Chop the lemon and orange peel fine. Cream together the butter and the sugar. Add the 8 Tbsp cocoa, oil, and eggs. Mix well. In a separate bowl, combine the flour, oatmeal, baking powder, the 2 Tbsp cocoa, and spices. To the original mixture, stir in the dry ingredients, the nuts, and the lemon and orange peel. Keep mixing until well-combined.

Place the Backoblaten (or cooled wafers) on the baking sheet. Using two tablespoons, spoon the Lebkuchen mixture onto each of the Backoblaten. Bake on the middle rack of the oven for 25 minutes. Top with glaze (see below).

Chocolate Glaze

Melt together 2 cubes of chocolate almond bark to one ounce of unsweetened baking chocolate. Dip only one-half of each Lebkuchen into the mixture. Allow to dry.

Notes:

The type of chocolate called for in this recipe is not available here. This cocoa/vegetable oil combo is the nearest equivalent I could make!
