Spekulatius is a traditional Christmas cookie that originated in the Netherlands. There are 3 types of Spekulatius cookies, spice, butter, and almond.

It is made out of a short dough (a cookie dough that is rolled out), and, similar to the Springerle cookie, it is formed by using a cookie mold. They are thin, crispy, and evenly browned. Store spekulatius cookies in airtight containers. This maintains their freshness and crispiness longer.

Ingredients:

  • 4-1/4 C Flour (500g)
  • 2 tsp.. Baking Powder
  • ½ C Margarine (200g)
  • ¾ C Almonds, ground (app. 1 C ground) (100g)
  • 1-1/4 C Sugar (250g)
  • 1 Tbsp Vanilla Sugar**
  • 2 knifetips* each ground Cardamom and ground Cloves
  • 1 tsp. Cinnamon
  • ½ tsp. Grated Lemon Peel
  • ¾ C Milk
  • Additional ground Almonds for the baking sheet

Procedure:

Combine flour, baking powder, margarine, ground almonds, sugar, vanilla sugar**, and spices. Add just enough milk to make a smooth dough. Cover and let sit at least 12 hours in a cool place.

Heat oven to 400 degrees.

Grease and flour the baking sheet. Sprinkle with remaining ground almonds. On a floured surface, roll out dough to app. ¼” thick and cut into hearts, stars, angels, and trees. Place on baking sheet. Bake 15 minutes, or until golden brown.

** You can find Vanilla Sugar at certain specialty stores, especially if you live close to a German one! It is also easily made by splitting two vanilla beans in half, lengthwise and kind of digging them into 5 lbs of sugar. Store this in a sealed container to “age” for at least 2 weeks. Keep stored in an air-tight container. Otherwise, you can also substitute 1 tsp Vanilla Flavoring for 1 Tbsp Vanilla Sugar
