Before the introduction of coffee, Biersuppe was eaten by all classes, even by the nobility. Beer was considered a nourishing and fortifying.

While there are several more sophisticated recipes for the preparation of beer soup, older cookbooks have simpler recipes which ordinary people could follow being unable to afford ingredients such as eggs and cream.

  • 1 1/2 tbsp. (heaping) flour
  • 3 1/2 tbsp. butter
  • 1 liter Beer
  • 1 small piece of cinnamon
  • sugar to taste
  • 2 Egg yolks
  • 1/2 c. plus 1/2 tbsp. milk
  • Toasted white (French) bread


Open the beer and let it get flat; at least two hours. Brown the flour in the butter, then add beer. Add cinnamon and sugar and bring to a boil. Whisk together the egg yolk and milk and stir into the hot (but no longer boiling) beer. Strain, and serve with toasted slices of bread.
