Zwetschgenkuchen (Quetschekuche, plum cake) is known as a summer cake and is referred to in the various regions of Germany, Austria and Switzerland, usually with proper names. Tastes very fresh and makes an excellent dessert!

Ingredients:

Yeastdough (this is the base for ANY great Hefekuchen) ...

  • 250 ml/1 cup of milk - heat up and then pour into a bowl, add
  • 80 g of sugar
  • 80 g of soft butter
  • 1/4 lemon rind
  • 1 Egg - mix with a spoon, add
  • 1 pack of yeast (fresh or dry) and
  • 500 g of flour and a pinch of salt.

Procedure:

Mix with hands until all flour is incorporated and cover. Set aside to rise for about 30 minutes or until dough is double in size.

Then take it out and put in a baking form, or two - depending on the size.

Wash and cut and remove pit of about 4 lbs of Zwetschgen or (or other fruit depending on the season). Put them onto the dough (stick them into the dough lengthwise - see picture).

Sprinkle with cinnamon and sugar...to your likes. Sometimes the prunes may be pretty sour...so whatever sweetness you like.

Bake for 35 minutes @ 400 F. Sprinkle some more sugar on the cake! Let cool, put a dollop of freshly whipped cream on top and enjoy!
