Do you like pears? Try this delicious pear cake recipe submitted by Ilona Maria - a simple and easy-to-make cake that features pears.
Ingredients:
- 1 1/3 stick of butter
- 1 1/3 cups sugar
- grate the peel off an organic lemon
- 2 3/4 cups of whole wheat flour (Instead of the whole wheat flour, you can use 3 3/4 cups of regular flour)
- 2 eggs
- 1/2 cup of milk
Cake Toppings
- 2 pounds of pears
- 1 tsp cinnamon
- 1/4 cup sugar
- 3/4 cup of walnut pieces or slivered almonds
- 1/3 stick of butter
Procedure:
Put the softened margarine (you can soften it in the microwave if you like), sugar and lemon zest into the bowl. Using electric beaters,, cream the two items together until they are light and fluffy. Drop in one egg at a time, add the flour, baking powder and milk. Beat everything together for a full 2 minutes on high speed. The mixture should begin to look light, smooth, creamy. Grease a spring form, and pour batter into it. Peel pears, core them, and cut in quarters. Cut 3-4 slits in the back of each quarter. Push pears into batter, sprinkle with cinnamon and sugar and last with the almonds or walnuts. Bake at 350F for appr. 40-45min, brush with liquid butter.
